This is an extremely scrumptious veggie dish.
| You will need aubergines, tomatoes, mozerella, shallots, garlic, and parmesan |
Preheat the oven to 200 degrees celcius.
| Slice the aubergine, salth both sides and lay on kitchen roll |
| Add a weight and leave for 30 minutes (this removes the bitter taste). Rinse and pat dry. |
| Slice the tomatoes |
| Chop the shallots and garlic |
| Heat some olive oil in a pan. Fry half of the garlic and shallots till golden. Fry the tomatoes |

| Place a layer of aubergine in a baking dish, followed by a layer of tomatoes |
| Add a layer of chopped mozerella |
| Add grated parmesan, then keep layering all ingredients finishing with a layer of mozerella. Grate lots of parmesan on the top |
| Bake for 30 minutes |
