Squid has an interesting and firm texture. A sashimi can be given more flavour by grilling it very lightly on one side without cooking it. Also the heat will make the grilled morsel curl.
Cost: £6.95 for two 20cm squids weighting 278g (£25/kg on 01/09/2010). Enough for 3-4 persons as a small starter.
A squid. Cut to produce a flat surface.
Cut into 2-3cm squares and crisscross with a sharp knife the outside surface.
Grill directly over a flame or on a grill for less than one minute until the morsels start to curl.
You can also cook the "arms" the same way.
Serve with salt and soy sauce
Serve the "wing" and the "arms"
... or the wing only.
Note: the taste goes well with warm or cold sake. Cold manzanilla or cold dry sherry is also very good. With moderation!
