Haddock fillets have a great texture. To get extra flavor you can sprinkle the fillet with a very small amount of sugar.The sugar will caramelize and the fillet achieve a good browning at a lower temperature than it would take to sear and brown the fillet otherwise.

Remove the skin, dry fish with kitchen paper, season with salt and paper, sprinkle with very little sugar (1/2 coffee spoon).
Heat oven to 220ºC.
Heat oil in in pan over high heat. Place fillets sugared sides down. Cook until browned (1 1/2 minutes). Flip fillets and transfer pan to oven.
Roast fillets until center is opaque at around 60-62ºC. If fillets have different shapes and thickness, some pieces will be cooked before others. Here, it took 9 minutes.

Serve immediately. No need for sauce. You can ad lemon wedges.
Note: the browning will be nicer (more evenly spread) if you sprinkle the sugar on the side of the fillet where the skin was.
